Hearty BBQ Rice Bowls Worth Trying

Delicious rice bowls are what you need if you want to have a satisfying meal. It’s a complete meal in itself with rice, meat, vegetables, and all the other good stuff. It is also a nutritious option for those who are healthy eaters. So for a warm and hearty meal with your family, try these BBQ Rice Bowls!

Korean Style Beef BBQ Rice Bowl

What do you need:

  • 1/2 kilogram of roast beef in its juices, heated
  • 1/4 kilogram jasmine rice, cooked
  • 1 clove garlic, finely minced
  • 4 cups baby spinach
  • 2 cups of grated carrots
  • 1 cup mushrooms, quartered
  • 2 tablespoons plus 1 teaspoon Korean barbecue sauce
  • 1 tablespoon of water
  • 1 tablespoon vegetable oil, divided
  • 1 teaspoon minced fresh ginger root

Heat 2 teaspoons of vegetable oil in a skillet and cook the mushrooms until tender, about 3 to 4 minutes. Place in a bowl and toss with 1 teaspoon of barbecue sauce. Set aside. Using the same pan, mix the garlic, spinach and water until the vegetables are cooked through. Transfer to a separate container. Pour the remaining oil into the pan and cook the carrots and ginger for 1 minute. Divide the rice among 4 bowls. Divide the meat and vegetables among 4 bowls as well and drizzle each with the remaining barbecue sauce.

Slow Cooked Chicken BBQ Rice Bowl

What do you need:

For the barbecue chicken

  • 4 boneless skinless chicken breast halves
  • 1 bottle of barbecue sauce
  • 1/2 cup Italian salad dressing
  • 1/2 cup brown sugar
  • 2 tablespoons Worcestershire sauce

For the rice bowl

  • 1/4 kilo of cooked white rice
  • 3 onions, chopped
  • 2 cups of black beans
  • 1 1/2 cups grated cheese of your choice
  • 1 cup of corn kernels
  • 1 cup sauce
  • 1 cup ranch dressing

Combine 2/3 of the bottle of barbecue sauce, salad dressing, brown sugar, and Worcestershire sauce in a bowl. Stir to combine the ingredients well. Place chicken breasts in slow cooker and pour mixture over chicken. Cook on high heat for 3 to 4 hours or low for 6 to 8 hours. When done, remove the chicken from the slow cooker and remove the juices. Shred the chicken and return to the slow cooker. Pour remaining barbecue sauce over meat and toss to coat. To assemble rice bowls, place rice in serving bowls and top with slow-cooked rotisserie chicken. Divide onions, black beans, and corn among bowls. Top with salsa or ranch dressing or both. Serve immediately.
